I have searched for information on how to create Toodledo themes but I can't find anything. Are there instructions anywhere on how to create your own theme?

Unless you are very good with CSS, you probably want to use something like the Firefox addon Stylish
Then you can just edit the existing style, or add elements if you are so inclined. I am just learning this myself, so I can't tell you much more.

There are also a few Toodledo styles available on that site, mostly made by Vin.
