How can I sign out of my account on the Android app? I've searched through the options available and can't find anything.

Apps are not really designed to be signed in and out of often. Because you have a passcode on your phone, it should be safe to stay signed in. But if you really want to, go into Android Settings, then into "Accounts" and then into "Toodledo" and then select "Remove Account" from the menu.
Be aware that this will delete everything off the phone, so make sure it has synced any changes you have made on the phone first. When you sign in again, it will do a full (slow) sync of all your data back to the device.
