I have read threads about this topic for some time (as early as 2008) and I do not see if you are intending to develop the feature or not. In order to keep record of activity, this is a "must".
Does the company intend to fix that problem? Otherwise, I will need to move to other software. I believe the feature has been requested long enough to conssider the change.

This is now available in the "new" tasks page -- make sure you're sorted by completed date as one of your sort options and then you'll be able to edit the completion date.
